‘Tis the Season to be "Green"

With the hustle and bustle of gift shopping, endless wrapping paper, and meal-after-meal, the holidays are an important time to be eco-friendly. Make it a SUSTAINABLE Holiday

  • Send holiday greeting cards and party invitations via email to conserve paper
  • Repurpose last year’s holiday cards into gift tags and ornaments
  • Buy organic foods from your local market and dress up your dinner table with organic fabric table cloths and napkins
  • Brighten your home with energy-efficient LED lights instead of traditional lights
  • Invigorate interior decorations with aromatic lavender, mint and sage wreaths
  • Recycle your tree, or better yet, give the gift of life with a bonsai tree, orchid, or plant
  • Get cozy around a festive candle crafted from soy or beeswax instead of processed oils
  • Break out your finest china and avoid using disposable dishes and utensils that clog landfills
  • Shop in vintage stores to find unique gifts, or give a gift-within-a-gift by using a scarf or shirt as wrapping
Cornish Hen

Cornish Hens with Tigris 7 Grain Medley (Serves 2)

  • 2 Cornish hens, thawed
  • Extra virgin olive oil
  • 2 Cloves garlic, peeled
  • Thyme, rosemary, sage and oregano fresh herbs
  • Sea salt and pepper
  • 1 Seeds of Change 7 Grain Medley (Tigris)
  • ½ Cup dried cranberries
  • ½ Cup dried apricots, diced
  • 2 Scallions, chopped
  • ½ Cup celery, diced
  • ¼ Cup crumbled feta cheese
  • Mixed greens to garnish

DIRECTIONS

Rinse Cornish hens and pat dry. Brush hens with olive oil and stuff garlic and fresh herbs into cavity. Sprinkle with salt and pepper. Roast in baking pan for 1 hour at 400 degrees. When hens are almost done, heat 90 second Tigris Seven Whole Grains. In medium bowl, combine grains, cranberries, apricots, scallions, celery and feta cheese. Garnish plate with fresh greens and add grain mixture around the plate. Place roasted Cornish hen in center and serve.

Tip: For golden brown Cornish hen, put under broiler for 3-4 minutes to finish.
