Swordfish Madras

Ingredients

12 OuncesSwordfish Cut into 1 inch cubes
1 JarSeeds Of Change® Madras Sauce
1/3 CupWarm water
5 EachSmall plum tomatoesCut in quarters
1 TablespoonCilantroFine chopped

Directions

  1. Heat oil, sauté ginger, chili and curry leaves for 1 minute.
  2. Add sliced onions and sauté until translucent, add the cubed swordfish and sauté 2 minutes.
  3. Pour in Madras Sauce and water, let simmer until the fish is cooked.
  4. Stir in tomatoes and chopped cilantro just before serving.
  5. Serve with bread or steamed rice.

Preparation Tips: Add a little more heat by adding extra chilies.
Ingredient Substitutions: Substitute 1 tsp. of curry powder for the curry leaves.
